Living Gluten-Free

I've learned that people want to jump straight to recipes and not hear a long monologue before getting to "the meat".

How we personally began the health journey was from finding out both my boys are allergic to gluten a few years back...

We had to change our eating around a bit; though aside from being more costly, it's been easier than expected.

Maybe i'm just a good baker and didn't realize it ~ whatever the case, my mom said I should start putting out recipes from my delicious experiments.

Here we are.  Short and sweet, right? 

I love experimenting with different flours but my current go-to, for simplicity's sake, is Bob's Red Mill, Gluten Free 1:1

 

~ Apple-Cinnamon Cookies ~

In one bowl, Peel & chop 1 apple, covering in 2tbls corn starch

In the other bowl, Mix 1/2 cup (softened) butter, 1/3 cups cane sugar, & 1/3 cup brown sugar ~ about 2 minutes

Then add in 1 egg, 1/2 tsp Vanilla extract, (1/2 tsp almond extract optional),

finally, the dry ingredients;  1/2 tsp baking soda, 1/2 tsp salt, & 1 1/4cup flower

Preheat oven to 350*

Refrigerate until oven beeps it's ready

mix a small bowl of 2 tsp cinnamon & 1 tbls cane sugar (sometimes i need to make more sometimes i have left-over ~ i don't get the science)

to roll dough balls in before baking 11 minutes & 11 seconds (;

 

~ Peach Cobbler ~

5 cups Peaches (easiest if you peel them & blanch them in boiling water for 1min but i've definitely ignored this step plenty of times.)

Preheat oven to 375*, oil pan with coconut oil

In 1 bowl mix peaches with 1 tbsp lemon juice, 1/4 cup brown sugar, 2 tbls corn starch, 1 tbsp melted butter or coconut oil

In another bowl mix 1 cup of flour, 1 1/2 tsp baking powder, 1/2 tsp salt, 1/2 cup cane sugar or coconut palm sugar

add in 1/4 cup butter(melted) & 1tsp vanilla

put your peach concoction in an 9x9x over safe container & cover it with the dough

Top off with 1/4tsp Cinnamon, 1/4tsp cardamom, 1/4tsp nutmeg, pinch of clove, 2 tbls sugar, scant 1/4 cup oats, 1/4 cup crushed walnuts

Bake for 27min & cool for an additional 30min ~ before devouring whole... Just me?

 

~ Banana Bread ~

Preheat oven to 350*

whisk 2 room temp eggs, 1/2 cup room temp butter, & 2/3 cup maple syrup

add in 2 tbls milk, 1/2 tsp salt, 1 tsp vanilla, 2-4 ripe bananas (depends on their size)

in separate bowl mix together 1 3/4 cup flour, 2 tbls cocoa powder, 2 tsp baking powder, 1/2 tsp baking soda , & mix this in with everything else

I like to top mine off with 1/4 cup walnuts (sometimes i candy them, yumm) sprinkle cinnamon, &  brown sugar 

Bake for 57 minutes & let cool for at least 10 before crackin in.

(once made one with dates & coconut.... oh my heavens ~ so delicious.  Once you have the base down experimentation is always welcome!)

 

~ Cranberry-Orange Muffins ~

Preheat oven to 400*

In one bowl whisk together 1 egg & 1tbls orange zest 

add in 1/2 cup of sugar of your choice, 1/3 cup yogurt, 2 tbls orange juice, 1/4 cup sunflower oil

then the dry ingredients, 1 cup flour, 1 3/4 tsp baking powder, 1/4 tsp salt

Sprinkle 1 1/4 cup cranberries with 1 1/2 tbls flour, gently fold into batter

In separate bowl you create the crumble on top.  It seems like way too much but really pack it on top of your muffins there because otherwise it falls off as they rise in the oven.

Crumble = 2/3 cup flour, 1/3 cup sugar, 1/2 tsp cinnamon, 1/4 cup butter ~  add to the top dilligently 

Reduce over heat to 375* & pop those suckers in, bake for 19 minutes
